stir-frying and also searing.

The wok bowl is 14″ die-cast  and very roomy.

Very easy clean-up plus it is scratch resistant.

Less oil is needed for cooking which makes it healthier for you and your family.

If going out for Chinese is getting too expensive and bad for the waistline? The solution – start cooking stir fry meals at home. It’s much cheaper and you have control of the ingredients that you use.

But, you definitely need a good wok. Choosing the best flat bottomed wok for your needs can be a dilemma, due to the large selection. Today, woks are readily available in a large variety of designs, sizes and materials.

A wok is a must for stir frying, a skillet or fry pan will not cut it!

A wok can be very versatile and can be used for more than just stir fry. It can be used as a saucepan, a fry pan or even a steamer.

Advantages of using a wok

Woks have been around for a long time, but not as common in an American kitchen. In fact many good cooks have never used one.

But, flat bottomed woks are a great addition to any kitchen.

Originally designed for cooking foods at high temperatures while stirring constantly. But there are many other uses for a wok.

Besides stir-frying, I have used my wok for a lot of different uses. A wok is very versatile. It can be used for frying food, especially deep frying, roast, steam, saute` and even scramble eggs. How’s that!

If you have never used a wok before, you will be surprised how simple they are to use for many different methods.

Using a wok for deep frying is good because it’s easier to turn the food over or remove it, due to the slanted sides. Also, less messy because the sides are flared so the wok catches a lot of the drippings. Also helps prevent burns.

Steaming in a wok is easy if you have a lid. You can steam clams, mussels and even corn on the cob. Just make sure your water is hot before adding the ingredients.

Sautéing greens are much easier in a wok because of the larger capacity to hold all the greens. So try sauteing collard greens, kale and spinach and see how much easier it is.

What should you look for when purchasing a wok?

Preferably look for a flat bottomed wok as a rounded bottom woks do not work as well on a gas or electric stove. You would need a wok ring for the wok to work best.

Different types of Woks

Stainless steel Woks

A good choice, very durable, but food can stick, so you may need to add more oil. But stainless steel woks do not need to be seasoned like other types of woks.

Carbon Steel Woks

Carbon steel conducts heat very good, so a wok will heat evenly and quickly.

Very durable, so it will last a long time. This type of wok requires seasoning

but have a natural non stick finish.

Cast Iron Woks

Cast iron woks cook very well, but have a few drawbacks.

Take a long time to heat up and to also cool down.

Must be seasoned, but is non stick.

Can be very heavy, making it hard to handle.

Non Stick Woks

Very hard to get as hot as needed to brown and sear the food properly.

Treated with a nonstick coating which could pose a health risk.

But, very easy cleanup.

Anodized aluminum Wok

Usually coated with a nonstick material for ease in use and cleanup.

Anodized aluminum takes time to heat up.

Easy to handle being light weight, but still quite sturdy.

Seasoning your wok

Carbon steel and cast iron woks come with a film of oil, wash this completely off and dry by placing the wok over high flame. Then you need to add some oil (small amount), sesame oil is good to use because it will burn quickly. Using a towel, rub the oil all over the inside surface of the wok. It will turn dark, which is normal.

Don’t clean with a metal scouting pad or steel wool, as that will remove the seasoning.

Woks come in every price range.

My favorite is the CTX Scanpan wok priced at $249.95.

Definitely one of the higher priced woks. It’s made in Denmark by Scanpan, a quality company.

What’s the best cookware to use with induction ranges and cook tops?

First, lets explain how induction cook tops and ranges work.

A coil of copper wire is located under each element or burner on the stove top. when, stove is switched on an electric current flows through the coil which produces an oscillation magnetic field. This induces an electric current in the pan that is placed on that burner or element. It will not heat if a pan or pot is not on the burner.

Induction cooking delivers fast heat and constant heat for simmering foods. Cools down almost immediately, leaving the burner cool.In fact the burner never gets very hot in the first place. Click here please.

It’s becoming a favorite of home cooks because of the speed of heating and cooking time and the noticeable lack of heat loss in the processing time. Making it more efficient and cost-saving in the long run.

Plus the cost of induction cook tops and ranges is becoming increasingly easier to afford and they are much more cost efficient than conventional methods of cooking.

Plus clean up is miminal compared to cooked on food , which sometimes happens with regular electric and gas stoves. I’m sure there is a learning curve to conquer when preparing a complete meal. I wouldn’t start with Thanksgiving dinner!

1. Zero heat loss.

Induction cooking transfers heat directly through the electromagnetic field to the pan being used on that burner, which will absorb all the energy. No loss of heat.

2. Fast temperature changes.

Induction cooking will bring liquids to a boil much faster than conventional cooking and simmer foods easily. Also, temperatures decreases just as quickly so a big saving on energy.

3. Safety.

The cooktop on an induction range will stay cool so will prevent burns, especially helpful when young children are around the kitchen.

4.Less Waste

The unit heats only the cookware being used and not the whole burner making it 70% more efficient than conventional electric or gas.

Now to the bad side.

Cons

There are very few cons in regard to Induction cooking.

Probably the biggest drawback is cost. The price of an induction range is higher than a conventional range. But the savings in energy costs might outweight that argument in the long run.

Also, you will have to fine tune your cooking skills. Gone are the days when you can muli-task while preparing dinner.You will have to keep a close eye on the cooking process as the food will cook much faster than electric cooktop and even a gas stove. But, that could be a plus in a busy family lifestyle.

Also, clean up is a breeze.

Now, lets get to which cookware is best for cooking with induction cookware.

First of all, check to see if the cookware is labeled “induction cookware friendly”. Then you are sure it will work well with your range or stovetop.

Look for stainless steel, cast iron and carbon steel, they also work well. Nonstick aluminum and copper can also be a good choice. When you go shopping for your cookware bring a magnet with you. If it sticks to the bottom of the cookware than that cookware is “induction- friendly”.

My first choice in any type of cookware is Scanpan Cookware. Their reputation is wonderful. A company that has been around for many years. Their best cookware for induction cooking is the CTX model.

Our next set of induction friendly cookware in the higher price range is the Woll Diamond Lite/Plus Non-stick Cookware. This cookware has reinforced nonstick scratch resistant cast iron aluminum and induction ready. With a coating made from diamond crystals insuring it being stick free.

Safe for use with metal utensils. Conducts heat four times faster than copper without any hot spots. Oven and dishwasher safe.

Duxtop SSIB-17 is a much cheaper set, at $249.99.

Made with 18/10 commercial grade stainless steel. It has heavy gauge  bonded aluminum enclosed bottom. Good for a lifetime. Anti slip satin finish on handles to help prevent accidents and improve durability.

Scanpan CTX Cookware

Excellent set of cookware. Top of the line cookware. Having enjoyed cooking most of my life, even as a very young girl, good pots and pans can be a joy to work with and Scanpan is certainly in that catagory.

Treat yourself to this cookware and you will be pleasantly surprised. The durability is exceptional, the finish is as good as advertised without any warped pan bottoms. The finish is just as good as advertised and you can sear, glaze and brown in these nonstick pans. Something you could not do with nonstick in the past.

Made in Denmark so not as well known as other cookware, but the Company is very much into high quality in all the different models of cookware they create. Plus the company is very eco-friendly.

Very easy clean. A couple of drops of dish detergent, some hot water, swish and it’s clean. Also dishwasher safe, though I prefer to wash by hand.

Made with stainless steel, titanium ceramic as a coating and is oven safe to 500 degrees.

All-clad Cookware E785sb64 non-stick dishwasher safe 13 piece

This is professional grade cookware made with 3-ply construction containing stainless steel with aluminum core to make the pans heat evenly.

Beautifully finished cooking surface is done in a star burst finish for an attractive look also making it stick-resistant for easy care.

The stainless steel handles are secured with rivets so they won’t loosen.

Pots and pans are oven safe up to 500 degrees.

Browns meat nicely.

Cons

Lids get too hot to handle and are not oven-safe. Must use pot holders.

Even thought meat browns well in the all clad pans, other food tend to stick and scorch very easily. You need to keep a close eye on them.

But still a good set of cookware. A nice set of pots and pans.

This 17 piece set in grey is one of the best values around. It’s has high quality

with a nonstick and nontoxic finish, making it very durable.

Made with heavy aluminum, but still easy to handle.

The fry pans have a heat indicator letting you know when the pans are hot enough for the food to be added.

Hard titanium non stick for very good performance.

Oven safe to 400 degrees and very easy to clean.

Good value for the price.

Cons

Probably won’t last as long as some of the higher priced sets, but all in all good pots and pans for the price.

This is a 10 piece set that has aluminum construction and is free of petroleum. The surface is ceramic, which is non stick for easy clean up.

This cookware is composed of hard anodized aluminum wirh a stainless steel base.

It’s dishwasher safe.

Stays flat so good for Induction Cooktops

3 layers of PFOA- free non-stick finish on the insides of the pans and skillets.

Can fry an egg without any oil or butter and it comes out easily.

So it’s also good for your diet.

Oven safe to 400F

$143.99  good price and good reviews.

Calphalon Unison Non-Stick 10 piece set

This is an affordable non-stick set which has a coating to help prevent food from sticking and burning.and also make clean-up much easier.

Unfortunately, the pans scratch very easily from metal utensils, so their life span is much shorter than many of the higher priced non-stick pans.

One very nice benefit to the Unison set is the 2 different cooking surfaces. One is the slide pan for easy release of sauces and egg dishes like omelettes and the other has a textured finishto help browwn meat, vegetables and fish.

The glass lids allow you to observe your food while it is cooking, plus they are oven safe so food can finish cooking or stay warm in the oven.

This 10 piece set contains:

8 and 10 inch omelette pans

2 quart sauce pan with lid

3 quart sauce pan with lid

4 quart saute pan with lid

8 quart stock pot with lid

The stainless steel handles stay cool when you are cooking.

That is my review on Nonstick Cookware. My recommendation is if you cook and entetain frequently invest in the more expensive set. Depending on what pieces you need and will use frequently.
